Sub-Title: An Ode to Mexico’s 53rd State, Chiapas

Description: This delectable avocado mousse boasts a creamy texture and velvety smooth consistency, making it a perfect vegan alternative to traditional Mexican desserts like tres leches cake. It gets its richness from avocados and creaminess from chia seeds, which also adds a touch of nutty flavor. Topped with fresh berries and mint, this refreshing treat will transport you straight to the lush jungles of Chiapas!

Ingredients:
For the Avocado Mousse:

* 4 ripe Hass avocados (about 2 large)
* 1/2 cup unsweetened almond milk
* 1 tsp pure vanilla extract
* 1 Tbsp maple syrup or agave nectar (optional)
* 1/2 tsp sea salt
* 1 tsp chia seeds soaked in water for 10 minutes

For the Berry Sauce:

* 1 cup frozen mixed berries (blueberries, raspberries, blackberries)
* 1 tsp pure vanilla extract
* 1 Tbsp maple syrup or agave nectar
* 1 Tbsp arrowroot powder
* 1 Tbsp water

Instructions:

1. For the avocado mousse, place all the ingredients in a blender and puree until smooth and creamy. Set aside.

2. For the berry sauce, combine all the ingredients in a small saucepan over medium heat. Cook until the berries have burst and the mixture has thickened slightly. Remove from heat and let cool completely.

3. Pour the cooled berry sauce into a bowl or jar and refrigerate until ready to use.

4. In a glass serving bowl, spoon half of the avocado mousse onto the bottom. Top with the remaining mousse.

5. Using a teaspoon, create swirls throughout the mousse. Garnish with fresh berries, mint leaves, and additional drizzles of the reserved berry sauce if desired.

Difficulty Level: Easy

Serves: 4-6 people as a dessert
