For the Avocado Mousse:

* 1 tsp pure vanilla extract
* 1 Tbsp maple syrup or agave nectar (optional)
* 1/2 tsp sea salt
* 1 tsp chia seeds soaked in water for 10 minutes
For the Berry Sauce:
* 1 cup frozen mixed berries (blueberries, raspberries, blackberries)
* 1 tsp pure vanilla extract
* 1 Tbsp maple syrup or agave nectar
* 1 Tbsp arrowroot powder
* 1 Tbsp water
Instructions:
1. For the avocado mousse, place all the ingredients in a blender and puree until smooth and creamy. Set aside.
2. For the berry sauce, combine all the ingredients in a small saucepan over medium heat. Cook until the berries have burst and the mixture has thickened slightly. Remove from heat and let cool completely.
3. Pour the cooled berry sauce into a bowl or jar and refrigerate until ready to use.
4. In a glass serving bowl, spoon half of the avocado mousse onto the bottom. Top with the remaining mousse.
5. Using a teaspoon, create swirls throughout the mousse. Garnish with fresh berries, mint leaves, and additional drizzles of the reserved berry sauce if desired.
Difficulty Level: Easy
Serves: 4-6 people as a dessert
Note: You can prepare both components up to a day ahead of time and assemble right before serving.
