1 tablespoon cornstarch or arrowroot powder

For the topping:
1 ripe mango (about 1 cup diced)
1 tablespoon maple syrup or honey (optional)
Instructions:
Step 1: In a blender, combine the avocado, almond milk, vanilla extract, cornstarch or arrowroot powder, and sea salt. Blend until smooth and creamy.
Step 2: Pour the mixture into four small bowls or ramekins. Cover each one with plastic wrap, directly on top of the surface of the pudding. Place them in the refrigerator for at least 4 hours or overnight to set.
Step 3: When ready to serve, top each portion with 1/4 cup of sliced mango and drizzle with optional maple syrup or honey if desired. Enjoy immediately!
Note: If you prefer a thicker consistency, increase the amount of cornstarch or arrowroot powder by 1-2 tablespoons.
