Instructions:

1. In a blender, combine the ice cubes, pineapple chunks, mint leaves, and lime juice until smooth. Blend well.
2. Pour the mixture into two tall glasses.
3. If desired, add sugar syrup to each glass and stir gently. Taste and adjust sweetness according to preference.
4. Top each glass off with 1 can of chilled coconut water.
5. Garnish with additional fresh mint leaves and pineapple slices.
