Description: These creamy and fruity popsicles are not only easy to make but also packed with probiotics from the coconut water kefir base. The combination of sweetness from the fruits and tanginess from the kefir makes for a perfectly balanced dessert. Plus, they’re free of refined sugar, dairy, and gluten, making them suitable for various dietary needs.
Ingredients (makes about 6-8 popsicles):
For the coconut water kefir popsicle mixture:
* 1 cup unsweetened coconut water kefir (see notes)
* 1/2 cup chopped mango (fresh or frozen)
* 1/2 cup chopped pineapple (fresh or frozen)
* 1/4 cup diced papaya (fresh or frozen)
* 1 tablespoon lime juice (from about half a lime)
* 1 teaspoon grated fresh ginger
* 1 pinch of sea salt
* 1/4 teaspoon ground cardamom (optional)
* Ice cubes (for serving)
For the chia seed jam filling:
* 1/2 cup chia seeds
* 1/4 cup maple syrup
* 1/4 cup chopped mango (fresh or frozen)
* 1/4 cup chopped pineapple (fresh or frozen)
* 1/4 teaspoon vanilla extract
* Pinch of sea salt
Optional:
* Additional chopped nuts or seeds (such as walnuts, pecans, sunflower seeds, or pumpkin seeds) for rolling the popsicles in
Instructions:
1. In a blender, combine all the ingredients for the coconut water kefir popsicle mixture until smooth. Taste and adjust seasoning if desired. Divide the mixture evenly among 6-8 popsicle molds.
2. For the chia seed jam filling, place all the ingredients in a small bowl and stir well. Set aside while you prepare the rest of the popsicles.
3. Place the filled popsicle molds on a baking sheet or tray and freeze for at least 4 hours or until solid. Once frozen, remove the sticks from the popsicles and enjoy immediately. Alternatively, store the popsicles in the freezer for up to 2 weeks.
Note: If you don’t have unsweetened coconut water kefir, you can use plain unsweetened coconut yogurt instead. Just be sure to start with a thinner consistency so that it sets properly in the popsicle mold.
Serving suggestions:
