Instructions:
1. Preheat your oven to 400°F. Line a baking sheet with parchment paper.
2. In a food processor, combine the black beans, cooked rice or quinoa, bell peppers, sweet potato, onion, garlic, cumin, chili powder, paprika, salt, pepper, and apple sauce until well combined and slightly chunky. Pulse in the panko breadcrumbs just until they start to stick together.
3. Using a scoop or your hands, form the mixture into six even patties. Place them onto the prepared baking sheet.
4. Bake for 15 minutes. Remove from the oven and flip the burgers over. Continue baking for another 10-15 minutes, or until golden brown and crispy on the outside.
While the burgers are baking, prepare the mango salsa. Combine all the ingredients in a bowl and stir gently to mix. Taste and adjust seasoning as desired. Cover and refrigerate until ready to serve.
Serve the burgers hot and topped with your favorite burger fixings, such as lettuce, tomato, pickles, and vegan mayo. Serve with a side of the mango salsa for added flavor and color. Enjoy!
