2 cups dried black beans, soaked overnight (or canned black beans for a quicker version)
1 large onion, chopped
3 cloves garlic, minced
2 carrots, diced
2 celery stalks, diced
1 red bell pepper, diced
1 green bell pepper, diced
1 bay leaf
1 teaspoon cumin
1 teaspoon paprika
1/2 teaspoon chili powder (adjust to taste for spiciness)
1 Salt and black pepper to taste
1 tablespoon olive oil (optional)
8 cups vegetable broth
1 Juice of 1 lime
1 Fresh cilantro, chopped, for garnish
1 Sliced green onions, for garnish
