– 2 cans (14 oz each) unsweetened coconut cream
– 1 (14 oz) can chicken broth
– 1 ½ cups water
– 1 cup fresh lime juice
– 1 tablespoon brown sugar
– 2 tablespoons fish sauce
– 1 tablespoon palm sugar
– Salt and pepper, to taste
– Optional: Rice noodles or rice
Instructions:
1. Heat the oil in a medium pot over medium heat until shimmering. Add the onions and garlic and sauté until softened, about 5 minutes. Stir in the spices and continue to cook until fragrant, about 1 minute.
2. Stir in the coconut milk and coconut cream, followed by the chicken broth and water. Bring the mixture to a boil, then reduce the heat to low and simmer for 10-15 minutes, stirring occasionally.
3. Meanwhile, prepare the rice noodles according to package directions or cook the rice as desired. Once the rice is ready, divide it equally among serving bowls.
4. To assemble, add the lime juice, brown sugar, fish sauce, palm sugar, salt, and pepper to the hot soup. Ladle the curry into the serving bowls along with the rice or noodles. Serve immediately and enjoy!
