– 1 teaspoon ground cumin
– ½ teaspoon salt

Instructions:
1. Preheat your grill to medium heat. If using a stove top, set it to high heat.
2. In a large bowl, combine the beef short ribs, olive oil, onion, garlic, cumin, salt, and black pepper. Toss to coat evenly. Set aside to marinate for at least 1 hour, turning occasionally.
3. Meanwhile, prepare the rub. In a small bowl, whisk together the red wine vinegar, water, sugar, and salt until well combined.
4. Once the beef has marinated, remove it from the bowl and discard the remaining marinade. Dry off the meat thoroughly with paper towels.
5. Coat each side of the beef ribs lightly with cornstarch to prevent them from sticking while cooking.
6. Season the grill grate or grill pan with salt and let the fat render before adding the beef. Add the beef ribs to the hot grill, making sure they do not touch directly. Cook for approximately 2 minutes per side, or until seared but still slightly pink in the center. Flip the ribs over and continue cooking for another 2 minutes.
7. Remove the ribs from the grill and transfer to a cutting board. Allow them to rest for 5-10 minutes before slicing into thin strips.
8. Combine the dark rum, sugar, and salt in a measuring cup. Stir gently to dissolve the sugar.
9. To serve, drizzle the sauce mixture onto the warm beef strips, sprinkle with extra salt, and enjoy!
