Ingredients:

* 1/2 cup unsweetened roasted peanuts (or cashews, almonds, sunflower seeds, etc.)
* 1/4 cup unsweetened cocoa powder
* 1/4 cup maple syrup
* 1 tsp vanilla extract
* 1 tsp salt (optional)
* 1 tbsp coconut oil or melted vegan butter (for easy handling)
* Water (as needed)

Instructions:

1. In a food processor, combine the peanuts, cocoa powder, maple syrup, vanilla extract, and salt (if using). Process until smooth and creamy, scraping down the sides as necessary. The mixture will thicken slightly at first, then become smoother and more spreadable.

2. Add water to thin out the mixture if desired. You may not need all the water called for, so start with just 1 tablespoon and add more as needed. Continue processing until you reach your desired consistency.

3. Transfer the filling mixture to a small bowl and set aside.

4. To make the chocolate shell, simply melt the coconut oil or vegan butter in a double boiler or microwave safe bowl. Alternatively, use a heatproof glass measuring cup in the microwave (microwave on high for 30-second intervals, stirring between each interval). Once melted, mix in the cocoa powder until well combined. If the mixture becomes too thick, add a few drops of water to thin it out.

5. Use a spoon or piping bag to scoop about 1 teaspoon of the filling onto a parchment paper lined baking sheet or silicone mat. Place another drop of the chocolate shell mixture on top of the filled teaspoon, covering completely. Gently press down to remove any air pockets and create a smooth surface. Repeat with remaining filling and chocolate.

6. Chill the filled spoons in the refrigerator or freezer for about 10 minutes, or until the chocolate has hardened. Remove from fridge/freezer and gently twist the spoon to release the filling. Enjoy your delicious African Peanut Butter Cups!

Note: For a thicker chocolate shell, allow the filling to cool slightly before pouring over the top. This will help prevent the shell from melting during the chilling process.
