Ingredients:
For the Açaí base:
1 cup frozen organic açaí berries (thawed)
1/2 banana (mashed)
1/2 cup unsweetened almond milk (or water)
For the Tropical fruit layer:
2 cups mixed seasonal fruits (such as sliced mangoes, pineapples, papayas, and kiwis), chilled
For the Granola topping:
1/2 cup gluten-free rolled oats
1/4 cup raw brown rice puffs
1/4 cup gluten-free rolled oats
1/4 cup maple syrup
2 tbsp melted coconut oil
2 tbsp chopped walnuts or pecans
1/4 tsp salt
Optional toppings:
Coconut flakes
Chopped nuts (walnuts, pecans, hazelnuts, etc.)
Hemp seeds
Directions:
1. In a blender, combine the thawed açaí berries, mashed banana, and unsweetened almond milk until smooth.
2. Pour the açaí mixture into two serving bowls.
3. Top each bowl with 1/2 of the mixed seasonal fruits.
4. Sprinkle the granola topping over the fruit layer in both bowls.
5. Serve immediately and enjoy!
Note: For a vegan version, simply substitute the honey with agave nectar or maple syrup.
