Description: This easy and nutritious breakfast bowl combines the sweetness of tropical fruits like pineapple and mango, the creaminess of coconut yogurt, and the rich flavor of açai berry puree. It’s a great way to kickstart your day with essential vitamins, minerals, and healthy fats. Plus, it’s vegan, gluten-free, high in fiber, and protein, making it suitable for various diets.

Ingredients:

For the açaí puree:

1 cup frozen açaí berries (thawed)
1/2 cup water

Instructions:

1. Combine all the ingredients for the açaí puree in a blender and mix until smooth. Set aside.

For the fruit mixture:

1 ripe banana (mashed)
1 medium-sized pineapple chunks (canned or fresh), drained
1 small mango, diced
1/4 cup granola (optional)

Instructions:

1. Mix together the mashed banana, canned or fresh pineapple, and diced mango in a large bowl. Stir gently to combine.

For serving:

2-3 tbsp. açaí puree
2/3 cup fruit mixture
1/4 cup unsweetened shredded coconut
1/2 cup unsweetened vanilla almond milk (or any non-dairy milk)
Optional toppings: chopped nuts, seeds, more granola, etc.

Instructions:

1. Pour the açaí puree into individual serving bowls. Add the fruit mixture and stir gently.
2. Top each serving with 1-2 tablespoons of unsweetened shredded coconut.
3. Divide the remaining ingredients among the bowls as desired.

Servings: 2-3 servings

Note: You can adjust the sweetness by adding more or less honey, depending on your preference. Also, feel free to experiment with different types of fruits and nuts according to your taste and what’s available in season.
