Açaí Bowl – Inspired by Brazilian Cuisine

Ingredients:

For the Açaí Berry Purée:

• ½ cup frozen açaí berries
• ½ cup water

For the Tapioca Pearls:

• ¼ cup tapioca pearls (also known as boba)

Toppings:

• 1 ripe banana, sliced
• 1 tablespoon unsweetened shredded coconut
• 1 teaspoon hemp seeds
• Pinch of cinnamon
• Sliced strawberries (optional)

Directions:

1. Make the açaí purée: Combine the frozen açaí berries and water in a blender and puree until smooth.

Note: If your blender has trouble processing the frozen fruit, you may need to transfer the mixture to a food processor or vitamin-A-rich oil (such as coconut oil) can be added to help it blend.

2. Cook the tapioca pearls: Rinse the tapioca pearls under cold water to remove any excess starch. Place them in a medium saucepan with 1 cup of water and bring to a boil over high heat. Reduce the heat to low, cover, and simmer for about 15 minutes or until tender. Drain well and set aside.

3. Assemble the açaí bowls: Divide the cooked tapioca pearls among four small serving bowls. Top each with a scoop of the açaí purée, sliced bananas, and unsweetened shredded coconut. Sprinkle with hemp seeds and cinnamon. Garnish with additional toppings, if desired.
