– 1 teaspoon ground coriander
– 1/2 teaspoon turmeric powder
– 1/4 teaspoon garam masala
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
– 2 tablespoons water, divided
– 1/4 cup breadcrumbs (optional)
For the sauce:
– 1 ripe avocado, sliced and pit removed
– 1/4 small red onion, thinly sliced
– 1/4 cup plain unsweetened non-dairy yogurt
– 1 tablespoon lemon juice
– 1/4 teaspoon salt
– 1/8 teaspoon black pepper
– Fresh herbs like parsley, cilantro, mint, or basil leaves, chopped (for garnish)
Instructions:
1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
2. In a large bowl, combine the grated carrots, mashed chickpeas, oats, brown rice flour, flaxseed meal, cumin, coriander, turmeric, garam masala, salt, and black pepper. Mix well.
3. Add the water and mix until a thick batter forms. If using breadcrumbs, stir them in now.
4. Divide the mixture into four equal portions and shape each one into a patty about 1/2 inch thick. Place the patties onto the prepared baking sheet.
5. Bake for 20 minutes. Remove from the oven and flip the patties over. Continue baking for another 10-15 minutes, or until golden brown.
While the patties are baking, prepare the sauce:
6. Combine all the sauce ingredients in a blender and puree until smooth. Adjust seasoning as desired.
Build your burger:
7. To assemble the burgers, place a lettuce leaf on each bottom bun. Top with a carrot patty, tomato slice, sliced onion, and sliced avocado. Drizzle with the green sauce and sprinkle with fresh herbs.
8. Serve immediately on top of the green salad. Enjoy!
Note: You can also pan-fry the patties if you prefer. Simply heat a non-stick skillet over medium-high heat and cook for about 5-7 minutes per side, or until golden brown and crispy.
