* 1 large bell pepper, cored and thinly sliced
* 1 jalapeño pepper, seeded and minced (optional)
* 1/2 cup frozen corn kernels
* 1 can black beans, rinsed and drained (approx. 1 cup)
* 1 ripe mango, peeled, pitted, and diced
* 1 avocado, peeled, pitted, and diced
* Juice of half a lime
* 2 tablespoons olive oil
* Salt and pepper to taste
* Water, as needed for steaming tortillas
Instructions:
1. In a blender or food processor, combine all the filling ingredients except for the tortillas, salt, and pepper. Blend until smooth. Set aside.
2. Heat a large skillet over medium heat. Add the oil and saute the onions and bell peppers until softened, about 5 minutes. Stir in the jalapeño pepper, corn, and black beans. Cook for another minute. Season with salt and pepper to taste. Remove from heat.
3. Place the warm tortillas on a plate and spread each one evenly with about 1/4 cup of the bean mixture. Top each taco with a generous scoop of the mango avocado salsa. Serve immediately.
