– 1 1/2 cups vegetable broth

Instructions:
1. Rinse the lentils well under cold water and allow them to soak for at least 8 hours before cooking. Alternatively, you can use pre-soaked lentils.
2. While the lentils are soaking, saute the onion, green peppers, and garlic in a small pot until tender.
3. Add the olive oil and set aside to cool slightly.
4. Once cooled, grind all the dry spices into a fine powder in a mortar and pestle or blender.
5. Place all the remaining ingredients except the seasonings into a large pot and bring to a boil.
6. Reduce the heat and simmer until the lentils are soft (approximately 40 minutes).
7. Meanwhile, mix together the ground spices and the remaining vegetables.
8. Remove the pot from the stove and add the mixed vegetables along with the spices to the lentil mixture. Stir everything thoroughly.
9. Return the pot to a gentle simmer and let it cook for another 10 minutes, stirring occasionally.
10. Taste test your soup and adjust the seasoning if necessary.
