Ingredients List:

– ¾ cup chicken broth
– ¼ cup red wine vinegar
– ¼ cup finely chopped basil leaves
– ¼ cup finely chopped parsley
– ¼ cup shaved Parmesan cheese
– 1 teaspoon salt
– 1 tablespoon sugar
– ½ tablespoon red pepper flakes
– 1 small head iceberg lettuce, torn into bite-size pieces
Instructions:
1. Bring a large pot of water to a boil. Add pasta, cook until al dente but still slightly crunchy when bitten through, about 7 minutes; strain well. Reserve 1/4 cup of pasta cooking liquid for later use.
2. In a large skillet over medium heat, warm the olive oil. Once warmed, sauté the onions and garlic until translucent.
3. Stir in the tomato paste, chicken broth, vinegar, and seasonings until combined. Season with additional salt and pepper as desired. Cook for about 2 minutes.
4. Add the reserved pasta cooking liquid, let simmer for another minute to allow the flavor to blend.
5. Meanwhile, toss the chopped lettuce with the remaining 1/4 cup pasta cooking liquid. Set aside.
6. When the sauce has thickened and the flavors have melded together, add the drained pasta back into the pan and gently stir to combine.
7. Garnish with the shaved Parmesan cheese, basil leaves, and parsley. Toss everything together lightly to distribute the dressing evenly. Serving suggestions: Serves 4 people as a main course or 2 people as a side dish.
