Instructions:
1. Mix the dry ingredients – whole wheat flour, baking soda, salt, and curry powder – together in a bowl until they form a uniform mixture. Set aside.
2. In another bowl, combine the wet ingredients – water, olive oil, garam masala, cumin, chili powder, and all the dals – and let them marinate for at least 1 hour before using.
3. Meanwhile, prepare the filling for the dosa. Add the eggs, chopped vegetables, and tomatoes to a mixing bowl and mix well.
4. When the dals have been marinating, strain them through a fine mesh strainer into a pot of boiling water. Let them cook for about 10 minutes, or until they become soft enough to break apart easily with your fingers. Remove from heat and allow them to cool down completely.
5. To assemble the dosa, pour approximately ¼ cup of batter onto a nonstick skillet or griddle heated over high heat. Once the surface of the pan begins to foam up slightly, flip the dosa over to spread out the batter evenly. Cook on both sides until golden brown and crisp.
6. Serve warm with a generous amount of coconut chutney as a side. Enjoy!
