– 1/2 cup water
– 1 tsp. chia seeds
– 1/4 cup rolled oats (optional)
For the topping:
– 1/2 cup unsweetened açaí puree
– 1/2 can full-fat coconut milk (do not use light coconut milk), refrigerated overnight to thicken
– 1 ripe mango, cubed
– 1 ripe papaya, cubed
– 1/2 ripe pineapple, diced
– 1/4 cup fresh blueberries
– 1/4 cup chopped walnuts or pecans (omit for nut-free version)
– 1 tbsp. maple syrup or agave nectar (optional)

Instructions:
1. In a high-speed blender, combine the base ingredients (coconut flakes, frozen banana, water, and chia seeds). Blend until smooth, adding more water if necessary to achieve desired consistency. Set aside.
2. Pour the thickened coconut cream from the can onto a plate and set aside at room temperature. This will allow the excess liquid to separate and thicken further.
3. To assemble the bowls, divide the prepared base among four serving glasses or bowls. Top each one with a layer of the tropical fruit mixture.
4. Divide the thickened coconut cream evenly on top of the fruits. Sprinkle each serving with chopped nuts and drizzle with maple syrup or honey, if using.
5. Place your bowl in the freezer for about 10 minutes to chill the acai bowl before serving.
Note: You can prepare the acai bowl base up to two days in advance and store it in an airtight container in the fridge. Simply follow steps 1 and 2 when you’re ready to assemble. The tropical fruit mixture can be prepped ahead of time and stored in the fridge for up to a day.
