Ingredients:
* For the Fried Rice:
* 1 cup cooked brown rice (or use leftover rice)
* 1/2 head cauliflower, cut into small florets
* 1 block extra-firm tofu, drained and cubed
* 2 tablespoons cornstarch
* 2 green onions, thinly sliced
* 1 carrot, grated
* 1/2 red bell pepper, diced
* 1/2 cup frozen edamame (soybeans), thawed
* 2 teaspoon sesame oil
* 2 teaspoon salt
* 1 tablespoon low-sodium soy sauce
* 1/4 cup unsweetened coconut flakes (optional)
For the Tahini Sauce:
* 1/4 cup natural peanut butter
* 1 tablespoon maple syrup
* 2 tablespoons water
* 1 tablespoon apple cider vinegar
* 2 teaspoon garlic powder
* 1/2 teaspoon onion powder
* 1/2 teaspoon ground cumin
* 1/2 teaspoon paprika
* 1/4 teaspoon black pepper
* 2 tablespoons tahini paste
* 1/4 cup warm water
* 1 clove garlic, minced
* 1 tablespoon fresh lime juice (optional)

Note: If you’re using leftover rice, be sure to let it cool completely before adding it to the rest of the ingredients. This will help prevent the rice from becoming mushy. You can also prepare the tahini sauce ahead of time and store it in an airtight container in the refrigerator for up to two weeks.
