Vegan Spiraled Cucumber Ribbons for Elegance

In recent years, the popularity of spiralized vegetable recipes has skyrocketed. This trend has not only been limited to zoodles and zuchetti but also includes innovative ways to use cucumbers. If you’re looking for an elegant and healthy appetizer or side dish that will impress your guests, look no further than these vegan spiraled cucumber ribbons!

What You Need:

– 1 large English cucumber (about 10 inches long)
– A julienne peeler or a spiralizer
– Kosher salt
– Freshly ground black pepper
– Balsamic glaze (optional)

Instructions:

1. Begin by slicing off both ends of the cucumber.
2. Using a julienne peeler or a spiralizer, carefully slice the cucumber into thin ribbons. Be sure to hold the cucumber firmly against the blade while turning it to avoid any mishaps.
3. Place the spiraled cucumber ribbons in a large bowl filled with ice water. This will help to prevent them from browning.
4. Once all the cucumbers have been spiralized, remove them from the ice water and gently pat them dry with paper towels.
5. In a small bowl, whisk together 1 tablespoon of balsamic vinegar and 1 teaspoon of Dijon mustard until well combined.
6. Pour the balsamic mixture over the cucumber ribbons and toss gently to coat.
7. Season the cucumbers with kosher salt and freshly ground black pepper to taste.
8. Serve immediately as an elegant appetizer or side dish.

Tips and Variations:

– For a sweeter version, omit the balsamic glaze and simply drizzle the cucumbers with a mixture of honey and rice wine vinegar.
– Add some diced red bell peppers or cherry tomatoes to the bowl for added color and flavor.
– Garnish with fresh basil leaves, mint, or parsley for a pop of green.
– Use different types of vinegar such as white wine, apple cider, or champagne to change up the flavor profile.
– Store leftover cucumber ribbons in an airtight container in the refrigerator for up to three days.
