Description: These vegan popsicles are not only delicious but also super easy to make. With only four simple ingredients – frozen bananas, orange juice, vanilla, and dates – you can whip up a batch in no time. The addition of zest gives them a beautiful citrus flavor, while the dates provide natural sweetness and creaminess. Plus, they’re gluten-free, grain-free, high-fiber, and kid-friendly!

Ingredients:

For the Popsicles:

* 4 large ripe bananas (about 2 cups)
* 1 cup unsweetened orange juice
* 1/4 cup plus 2 tbsp. water
* 1 tbsp. freshly squeezed orange juice (from about 1 small orange)
* 2 medjool dates, pitted and chopped
* Pinch of salt
* Zest of 1 medium-large orange

Instructions:

1. Preheat your oven to 350°F (180°C). Line a baking sheet with parchment paper.
2. Place the chopped dates in a food processor and process until smooth and creamy. Add in the water and processed dates, orange juice, and vanilla extract. Process well.
3. In a blender, combine the frozen banana mixture and date puree. Blend on high speed until smooth and creamy. You may need to scoop down the sides of the blender a few times using a spoon.
4. Pour the banana mixture into a bowl and stir in the salt and orange zest. Taste and adjust seasoning as desired.

Note: At this point, you can cover and freeze the mixture for later use if desired. Simply allow it to harden slightly before transferring to an air-tight container.

To assemble the popsicles:

5. Divide the prepared batter evenly among six 4-ounce silicone ice cube trays. If using wooden sticks, insert one stick into each compartment, making sure it stands upright.
6. Cover the trays with plastic wrap and place in the freezer for at least 4 hours or overnight.

Serving suggestions:

7. Once the popsicles have set, remove from the freezer and enjoy right away. Alternatively, run warm water over the bottom of the trays for a few seconds to loosen the popsicles before gently pulling them out.
