¾ cup firmly packed fresh cilantro leaves
⅓ cup loosely packed fresh parsley leaves

optional: ⅓ cup roasted and chopped sunflower seeds
Instructions:
Step 1: Soak the cashews
Place the cashews in a medium bowl and cover them with ½ cup of hot water. Let it sit for at least 1 hour or until softened.
Step 2: Drain and rinse the cashews
Drain the soaked cashews and place them in a high-speed blender along with the remaining ingredients.
Step 3: Blend everything into a smooth sauce
Start the blender on low speed and gradually increase to high. Blend until you have a creamy and well-combined sauce. You may need to stop and scrape down the sides if necessary.
Step 4: Optional: Add sunflower seeds
If using, fold in the roasted and chopped sunflower seeds until well combined.
Step 5: Serve and enjoy!
