Description: This creamy, tangy, and flavorful tahini sauce gets its zest from fresh lemon juice, garlic, and optional sunflower seeds. It’s a healthy alternative to store-bought dressings and can be whipped up in just minutes!

Ingredients:
1 cup raw unsalted cashews or mixed nuts*
½ cup filtered water (for soaking the cashews)
½ teaspoon sea salt
⅓ cup fresh squeezed lemon juice
¼ cup warm water (to help emulsify the sauce)
¾ cup firmly packed fresh cilantro leaves
⅓ cup loosely packed fresh parsley leaves
1 clove garlic, minced
⅛ teaspoon ground black pepper
optional: ⅓ cup roasted and chopped sunflower seeds

Instructions:

Step 1: Soak the cashews
Place the cashews in a medium bowl and cover them with ½ cup of hot water. Let it sit for at least 1 hour or until softened.

Step 2: Drain and rinse the cashews
Drain the soaked cashews and place them in a high-speed blender along with the remaining ingredients.

Step 3: Blend everything into a smooth sauce
Start the blender on low speed and gradually increase to high. Blend until you have a creamy and well-combined sauce. You may need to stop and scrape down the sides if necessary.

Step 4: Optional: Add sunflower seeds
If using, fold in the roasted and chopped sunflower seeds until well combined.

Step 5: Serve and enjoy!
Transfer the finished sauce to a serving bowl and drizzle over your favorite dishes. Store any leftovers in an airtight container in the refrigerator for up to 1 week.

Servings: 1 (Makes about 2 cups of sauce)
Note: To make this sauce extra thick and creamy, simply blend longer or strain the mixture through a fine mesh sieve before serving.
