Ingredients:
For the base:
– 2 medium carrots, peeled and chopped
– 1 large handful fresh spinach leaves

– Juice from half a lemon
– 2 cups unsweetened almond milk or cashew milk
– Pinch of sea salt
For the topping:
– 2 tablespoons tahini
– 1 teaspoon honey (optional)
– 2 tablespoons slivered almonds or pumpkin seeds
– Sliced strawberries or banana (for serving)
Instructions:
1. Add all ingredients for the base into a blender and puree until smooth.
2. Pour the mixture into two glasses and refrigerate while preparing the toppings.
3. For the topping, mix together tahini, honey (if using), and water in a small bowl until desired consistency is reached. You may need more or less liquid depending on how thick you prefer the sauce.
4. Divide the prepared topping between the two glasses and spread evenly.
5. Sprinkle each serving with almonds or pumpkin seeds and top with sliced fruit.
Note: If you have extra time, you can let the smoothie sit in the fridge overnight for the flavors to meld together. The longer it sits, the thicker the texture will become!
