Ingredients:
1 cup unsweetened almond milk (or your favorite plant-based milk)
1/2 teaspoon apple cider vinegar (fermentation agent)
1 tablespoon chia seeds
1 pitted Medjool date (natural sweetener)
pinch of sea salt (enhances flavors)
2 ripe bananas (mashed)
1 frozen mango (optional, for added sweetness and texture)
Directions:
1. In a small bowl, whisk together the almond milk, apple cider vinegar, and 1 tablespoon of chia seeds until well combined. Set aside for 5 minutes to allow the chia seed gel to form.
2. Meanwhile, place the remaining 2 tablespoons of chia seeds in another small bowl and mix with the date and pinch of salt. This will be your base layer.
3. Add the mashed banana, optional frozen mango, and any desired toppings (such as shredded coconut, chopped nuts, dried fruit, granola, etc.) to the prepared chia gel mixture from Step 1. Stir gently to combine.
4. Spoon the mixture into four glasses or jars.
5. Sprinkle each serving with the chia seed-date mixture from Step 2. Allow the parfaits to sit in the refrigerator for at least 1 hour or overnight for the flavors to fully develop. Serve cold.
Note: You can adjust the amount of liquid used in the chia gel mixture based on your preference for a thicker or thinner consistency. If you would like a thicker consistency, use less liquid; if you prefer a thinner consistency, use more liquid.
