Ingredients

the Banana Split Base (Makes about 2 liters):
2 very ripe bananas (about 1 cup mashed)
1 can full -fat coconut milk (14 oz.)
1 tbsp . vanilla extract
Pinch of sea salt
the Swirl and Topping Mixture (Makes enough to fill 1 large freezer-safe container):
1 cup frozen mixed berries (such as blueberries, raspberries, and blackberries)
1/2 cup pitted dates, roughly chopped
1/2 cup unsweetened applesauce
1/2 cup rolled oats (not instant)
1/2 tsp . cinnamon powder
1 tbsp . maple syrup (optional)

Instructions:

1. In a high-speed blender, combine all the ingredients for the base and blend until smooth and creamy, scraping down the sides as needed.
2. Pour the mixture into a large freezer-safe bowl or container and freeze for at least 4 hours or overnight.
3. Meanwhile, prepare the swirl and topping mixture by combining all the ingredients in a food processor or high-speed blender. Blend until everything is well combined and the mixture resembles a thick paste. Set aside.
4. After churning, allow the ice cream to soften slightly before scooping it out onto serving dishes. Use a knife or skewer to swirl the colors and create a marbled effect.
5. Top each serving with your favorite fruit and granola, drizzle with a little bit of maple syrup if desired, and enjoy!
