Ingredients

For the Peanut Sauce:
1/4 cup unsweetened natural peanut butter (homemade or store-bought)
1 tablespoon rice vinegar
1 teaspoon sesame oil
1 teaspoon soy sauce
1 clove garlic, minced
1/4 cup water, divided
1/2 teaspoon cornstarch
pinch of red pepper flakes
For the Filling:
1 block extra firm tofu, drained and cut into small cubes
1 cup frozen broccoli florets, thawed and drained
1/2 cup shredded carrots
1/4 cup sliced green onions, both white and light green parts
1/4 cup thinly sliced bell peppers, any color (about 1 medium bell pepper), seeded and ribbed for easier removal
1/2 cup cooked brown rice, preferably whole grain
Sriracha or hot sauce, optional
For Assembly:
Butter lettuce leaves, Boston bibb lettuce, or other large leafy greens
Assorted fresh herbs such as cilantro, mint, basil, or Thai basil
Sliced avocado, for garnish (optional)
Sliced jalapeño, for garnish (optional)
Chopped roasted peanuts, for garnish (optional)

Instructions:

Step 1: Prepare the peanut sauce by combining all ingredients in a blender or food processor. Blend until smooth. Set aside.

Step 2: In a large mixing bowl, combine the tofu filling ingredients and mix well. Divide the mixture evenly among four serving bowls.

Step 3: Add about 1/4 cup of the prepared peanut sauce to each serving bowl and stir gently to coat the tofu mixture.

Step 4: Place the prepared lettuce leaves on individual plates. Spoon the tofu mixture into the center of each leaf and top with desired amount of peanut sauce. Garnish with assorted fresh herbs, avocado, and jalapeño if desired. Serve immediately.
