In a food processor, combine the chickpeas, fresh parsley, red onion, minced garlic, ground cumin, ground coriander, baking powder, salt, and pepper. Pulse until the mixture is well combined but still slightly chunky. |
2
Done
|
Form the mixture into small patties or balls and place them on a baking sheet lined with parchment paper. Refrigerate for 15-20 minutes to firm up. |
3
Done
|
Heat a skillet with olive oil over medium-high heat. Fry the falafel patties until they are golden brown and crispy on both sides, about 3-4 minutes per side. Place them on a paper towel-lined plate to remove excess oil. |

In a small bowl, whisk together the tahini paste, lemon juice, water, minced garlic, salt, and pepper to make the tahini sauce. |

Warm the gluten-free tortillas in a dry skillet or microwave. |
6

Assemble your wraps by placing a lettuce leaf on each tortilla, followed by falafel patties, sliced cucumber, sliced tomato, and sliced red onion. Drizzle with tahini sauce. |
