Steps

1
Done

Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.

2
Done

In a mixing bowl, combine the finely chopped pistachios, coconut sugar (or brown sugar), and ground cinnamon. Set the filling mixture aside.

3
Done

In a saucepan over medium heat, combine the maple syrup, water, agave nectar (or date syrup), lemon juice, and vanilla extract. Bring the syrup to a simmer, then reduce the heat and let it simmer for about 10 minutes. Remove it from heat and let it cool slightly.

4
Done

Lay one sheet of phyllo dough in the prepared baking dish, and brush it generously with melted coconut oil or vegan butter. Repeat this process, stacking and brushing each sheet, until you have about 8 sheets layered.

5
Done

Sprinkle a portion of the pistachio filling evenly over the layered phyllo sheets.

6
Done

Continue layering and brushing phyllo sheets, sprinkling pistachio filling, until all the filling is used. Finish with another 8 sheets of phyllo, generously brushing each sheet with oil or vegan butter.

7
Done

Using a sharp knife, carefully cut the baklava into diamond or square-shaped pieces.

8
Done

Bake in the preheated oven for 30-35 minutes, or until the baklava is golden brown and crisp.

9
Done

As soon as you remove the baklava from the oven, drizzle the prepared syrup evenly over it, making sure to cover all the pieces. Allow the baklava to cool completely before serving.

10
Done

Once cooled, serve the baklava bites, drizzling each piece with vegan honey or agave nectar.
