1 package (16 oz) vegan phyllo dough, thawed according to package instructions

1/2 cup melted coconut oil or vegan butter

1 Vegan honey or agave nectar, for drizzling
Directions
Store any leftover baklava bites in an airtight container at room temperature for up to a week.

Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish. |

In a mixing bowl, combine the finely chopped pistachios, coconut sugar (or brown sugar), and ground cinnamon. Set the filling mixture aside. |

In a saucepan over medium heat, combine the maple syrup, water, agave nectar (or date syrup), lemon juice, and vanilla extract. Bring the syrup to a simmer, then reduce the heat and let it simmer for about 10 minutes. Remove it from heat and let it cool slightly. |

Lay one sheet of phyllo dough in the prepared baking dish, and brush it generously with melted coconut oil or vegan butter. Repeat this process, stacking and brushing each sheet, until you have about 8 sheets layered. |

Sprinkle a portion of the pistachio filling evenly over the layered phyllo sheets. |

Continue layering and brushing phyllo sheets, sprinkling pistachio filling, until all the filling is used. Finish with another 8 sheets of phyllo, generously brushing each sheet with oil or vegan butter. |
