1/4 cup low-sodium soy sauce or tamari (for gluten-free)
2 tablespoons rice vinegar
2 tablespoons maple syrup or agave nectar
1 tablespoon toasted sesame oil
1 tablespoon grated fresh ginger

1 teaspoon Chinese five-spice powder
1 block (14 oz) extra-firm tofu, pressed and cubed
For the Skewers:
1 Wooden skewers, soaked in water for 30 minutes
1 Red bell pepper, cut into chunks
1 Yellow bell pepper, cut into chunks
1 Zucchini, sliced into rounds
1 Red onion, cut into chunks
1 Button mushrooms
1 Cherry tomatoes
1 Green onions, chopped (for garnish)
1 Sesame seeds (for garnish)
