1 Lettuce leaves, tomato slices, and sliced avocado for garnish

1 Vegan mayo, ketchup, or your preferred burger condiments
Directions
Assemble your Vegan Caribbean-Inspired Sweet Potato and Black Bean Burger by placing a lettuce leaf, a slice of tomato, and some avocado slices on the bottom half of each bun. Top with a burger patty and your choice of vegan mayo, ketchup, or preferred condiments. Complete with the top bun and enjoy!

Place the diced sweet potatoes in a pot of boiling water and cook until tender, about 10-15 minutes. Drain and mash the sweet potatoes in a large mixing bowl. |

Add the drained and rinsed black beans to the mashed sweet potatoes and mash them together, leaving some texture. |

To the sweet potato and black bean mixture, add cooked quinoa, finely chopped red bell pepper, finely chopped red onion, minced garlic, ground cumin, ground allspice, smoked paprika, salt, and black pepper. Mix well to combine all the ingredients. |
