Ingredients
-
1 (14-ounce) can sweetened condensed coconut milk
-
2 tablespoons unsweetened cocoa powder
-
2 tablespoons vegan margarine or coconut oil
-
1 A pinch of salt
-
1 Vegan chocolate sprinkles or shredded coconut (for rolling)
Directions
Place the Vegan Brazilian Brigadeiro Truffles on a tray lined with parchment paper to set. Allow them to cool completely before serving.
Brigadeiro truffles are traditionally coated with chocolate sprinkles, but you can get creative and use other coatings like crushed nuts or cocoa powder if you prefer. These truffles are best enjoyed within a few days of making them.

In a non-stick skillet or saucepan, combine the sweetened condensed coconut milk, unsweetened cocoa powder, vegan margarine or coconut oil, and a pinch of salt. |

Cook the mixture over medium-low heat, stirring continuously with a wooden spoon. Continue to stir until the mixture thickens and starts to pull away from the sides of the pan. This should take about 10-15 minutes. It's important to keep stirring to prevent burning. |

Once the mixture has thickened and forms a cohesive mass, remove it from the heat. |

Allow the mixture to cool for a few minutes until it's cool enough to handle. |

Roll each brigadeiro truffle in vegan chocolate sprinkles or shredded coconut, ensuring they are evenly coated. |
