1/4 cup non-dairy milk (such as almond, soy, or oat milk)
For the Strawberry Jam Filling (for about 1/2 cup filling):
1/2 cup seedless strawberries, hulled and sliced
1 tablespoon maple syrup
1 tablespoon arrowroot powder

Step 1: Prepare the Mochi Doughnut Batter

1. In a large bowl, whisk together the glutinous rice flour, tapioca flour, potato starch, xanthan gum, baking powder, and salt.
2. Add the applesauce and non-dairy milk to the dry mixture and stir until well combined. The batter should be thick but pourable. If necessary, adjust the consistency by adding more liquid.
3. Cover the bowl with plastic wrap and set aside for at least 30 minutes to allow the glutinous rice flour to hydrate.

Step 2: Make the Matcha Glaze

1. Combine the matcha green tea powder and cornstarch in a small bowl. Whisk together until there are no lumps.
2. Gradually add the non-dairy milk to the matcha mixture, whisking constantly until smooth. Set aside.

Step 3: Assemble the Donuts

1. Preheat your air fryer to 350°F (175°C). Spray the inside of the air fryer basket with cooking spray or lightly grease it with vegetable oil.
2. Divide the prepared batter into 12 equal portions using a ice cream scoop or spoons. Drop each portion into the air fryer basket.
3. Cook the donuts for 4-5 minutes per batch, turning halfway through, until golden brown and puffed up. Allow the first batch to cool before removing from the air fryer to avoid burning yourself.

Step 4: Fill the Donuts

1. While the first batch is cooking, prepare the strawberry jam filling. Combine the sliced strawberries, maple syrup, and arrowroot powder in a small saucepan. Heat over low heat, stirring constantly, until the berries have broken down and the mixture has thickened slightly. Remove from heat and let cool completely.
2. Once the first batch of donuts is done cooking, transfer them to a wire rack placed over a sheet pan. Allow them to cool for about 5 minutes.
