1/4 teaspoon xanthan gum (omit if using store-brand GF flours)
1 1/2 cups water
Pinch of salt
For the sauce:
1 medium ripe avocado, pureed
Juice of 1 lime
Zest of 1 lime
1 clove garlic, minced
1 tablespoon extra virgin olive oil
Salt and pepper to taste
Toppings:
1 small onion, thinly sliced
1 ear corn, shaved off the cob
1 red bell pepper, thinly sliced
1 yellow bell pepper, thinly sliced
Handful of cherry tomatoes, halved or quartered
Handful of chopped fresh cilantro (optional)
Diced mango (canned or fresh)
Sliced jalapeños, seeded and finely chopped (optional)

For the sauce:

Instructions:
1. Preheat your grill or cast iron skillet over medium-high heat. If using a grill, lightly grease the rack or brush with cooking oil. If using a cast iron skillet, heat a drizzle of olive oil in the pan until hot.

2. To prepare the crust, whisk together the flour, xanthan gum (if using), and salt in a large mixing bowl. Make a well in the center of the mixture and slowly pour in the water while stirring with a fork. Once the dough comes together, turn it out onto a clean surface and knead for about 5 minutes, adding more water as necessary to achieve a smooth and slightly tacky dough. Divide the dough into four equal portions and roll each portion into a ball. Cover with plastic wrap and set aside.

3. For the sauce, combine the avocado, lime juice, zest, garlic, and olive oil in a food processor or high-speed blender. Blend until smooth, scraping down the sides as needed. Taste and adjust seasoning with salt and pepper. Set aside.

4. To assemble the pizzas, place one dough ball between two pieces of parchment paper or a Silpat baking mat. Using a rolling pin, roll out the dough into a circle about 1/4-inch thick. Transfer the rolled-out dough to the prepared grill or cast iron skillet. Cook for about 2-3 minutes per side, or until the edges begin to brown and the bottom is lightly charred. Remove from the heat and repeat with the remaining dough balls.

5. Spoon some of the avocado sauce evenly onto the cooked crust of each pizza. Top with the onion, corn, bell peppers, cherry tomatoes, cilantro, and mango. Sprinkle with salt and pepper, to taste. Add optional jalapeño slices if desired.

6. Place the pizzas back on the preheated grill or cast iron skillet over direct heat. Grill for another 2-3 minutes, or until the cheese has melted and the vegetables are tender. Carefully remove from the heat and serve immediately. Enjoy!
