Description: This creamy and refreshing vegan drink combines two popular beverages – Thai iced coffee and turmeric latte – into one delicious masterpiece! Ingredients:
For the Turmeric Latte Foam:
2 tablespoons chia seeds
1 teaspoon ground turmeric
Pinch of black pepper
½ cup unsweetened almond milk (or your favorite non-dairy milk)

For the Thai Iced Coffee:
1 cup rolled oats (not instant)
¼ cup water
½ cup unsweetened coconut flakes
½ cup unsweetened vanilla almond milk
⅓ cup strong brewed coffee (use a medium roast)
½ teaspoon ground cinnamon
½ teaspoon ground cardamom
½ teaspoon palm sugar (or coconut sugar)

Instructions:

To prepare the Turmeric Latte Foam:

1. In a small bowl, whisk together the chia seeds, turmeric, and black pepper. Add the almond milk and stir until well combined. Set aside to thicken for about 5 minutes.

To prepare the Thai Iced Coffee:

1. Soak the rolled oats in ¼ cup of water for at least 1 hour or overnight. This will help them absorb water and create a thicker consistency when blended.

2. Drain and rinse the soaked oats thoroughly. Combine all the ingredients for the Thai Iced Coffee in a high-speed blender and puree until smooth and creamy.

3. Pour the mixture into a large pitcher and refrigerate for at least 1 hour or up to 3 hours.

To serve:

4. To assemble the drink, divide the ice cubes equally between two glasses. Pour half of the Thai Iced Coffee mixture into each glass and gently stir. Top each serving with the prepared Turmeric Latte Foam. Serve immediately and enjoy!

Note: You can adjust the sweetness level by adding more or less palm sugar/coconut sugar to taste.
