Sweet Potato and Coconut Curry

Ingredients:
– 2 tablespoons olive oil
– 2 medium onions, finely chopped
– 2 cloves garlic, minced
– 1/2 teaspoon ground cumin
– 1/2 teaspoon ground coriander
– 1/2 teaspoon chili powder (or more to taste)
– 1 pound boneless skinless chicken thighs, cut into bite-size pieces
– Salt and pepper to taste
– 2 large sweet potatoes, peeled and cubed
– 2 cups low sodium vegetable broth
– 1 cup coconut milk
– 1/2 cup plain yogurt
– 1/2 avocado, sliced
– 1/4 cup fresh cilantro, chopped
– Lime wedges for garnishing
Directions:
1. Heat the olive oil in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes. Stir in the garlic and spices, and continue to saute until fragrant, about 1 minute.
2. Season the chicken with salt and pepper to taste. Add the chicken to the pan along with the sweet potatoes and stir to coat everything evenly. Cook, stirring occasionally, until the chicken is browned and the sweet potatoes are tender, about 10 minutes.
3. Add the vegetable broth and coconut milk to the pan. Bring the mixture to a boil, reduce the heat to a simmer, cover partially, and cook until the sweet potatoes are fork-tender, about 20 minutes.
4. Remove the lid, and remove the sweet potatoes and chicken from the pan using a slotted spoon. Reserve them in separate bowls.
5. Meanwhile, whisk together the yogurt and remaining liquid in the pan until smooth. Return the chicken and sweet potatoes to the sauce and season with additional salt and pepper if desired. Gently toss the chicken and sweet potatoes through the sauce to combine.
6. Serve the dish warm, garnished with lime wedges, slices of avocado, and a sprinkling of cilantro. Enjoy!
