½ jalapeño pepper, seeded and finely chopped (optional)
1 medium potato, boiled and mashed
2 tablespoons unsweetened applesauce
2 tablespoons Greek yogurt
¼ cup breadcrumbs (for binding)
¾ cup water
For the mango chutney:
1 ripe mango, diced
1 tablespoon lemon juice
1 tablespoon brown sugar or maple syrup
½ teaspoon ground cumin
½ teaspoon ground coriander
½ teaspoon turmeric powder
¼ teaspoon red chili flakes (optional)

Made with simple ingredients like lentils, oats, chickpea flour, and spices, they come together quickly and easily to create a satisfying and nourishing meal. Serve them on buns or lettuce leaves with your favorite condiments, such as mango chutney, tomato sauce, or tzatziki sauce. You’ll never go back to regular old beef burgers again!

For the mango chutney:

Instructions:

For the burgers:

1. Preheat your air fryer to 370°F (190°C). If you don’t have an air fryer, you can bake them in the oven at 370°F (190°C) for about 15 minutes per side until golden brown.
2. In a large mixing bowl, combine all the burger ingredients except for the water and breadcrumbs. Mix well to combine everything evenly.
3. Add the water and mix again. The mixture should hold together when squeezed gently. If it doesn’t, add more breadcrumbs, 1 tablespoon at a time, until the desired consistency is reached.
4. Divide the mixture into six equal portions and shape each portion into a patty. Place the patties on a plate and set aside.
5. Heat enough oil in a non-stick pan over medium heat. Once hot, place the patties in the pan and cook for about 3-4 minutes per side or until browned. Flip and continue cooking for another 2-3 minutes.
6. Transfer the cooked patties to a paper towel-lined plate to absorb any excess oil. Set aside.

For the mango chutney:

1. In a small bowl, whisk together the ingredients for the mango chutney. Taste and adjust seasoning as needed.

Serving suggestions:

To assemble the burgers, spread a little bit of your favorite condiment (such as mango chutney, tomato sauce, or tzatziki sauce) onto the bottom half of a bun. Place a burger patty on top, followed by additional toppings if desired (e.g., avocado, lettuce, tomato, onion, etc.). Top with a dollop of hummus or guacamole, and finally, cover with the other half of the bun. Enjoy!

Note: This recipe makes 6 large burgers. Double or triple the ingredients as needed to feed a larger crowd.
