1 tablespoon fresh coriander leaves, chopped (optional)
Salt and pepper to taste
For the Sauce:
1/4 cup salsa (your favorite store-bought or homemade!)
Optional Garnish:
chopped cilantro, for serving
Instructions:
1. Preheat your skillet over medium heat and lightly oil it with cooking spray or a little bit of water.
2. Add the diced tomatoes, onions, and garlic to the pan and sauté until they start to soften, about 5 minutes.
3. Turn down the heat to low and stir in the cumin powder, coriander leaves (if using), salt, and pepper. Cook for another minute or two, until everything is well combined and fragrant.
4. Remove from the heat and let the mixture cool slightly.
5. Meanwhile, prepare your avocado halves by removing the pit and cutting each half lengthwise into two long wedges. Carefully remove the flesh from the skin and place it in a bowl. Mash the avocado with a fork until it’s roughly chunky but still holds its shape.
6. To assemble the stuffed avocados, scoop out some of the flesh from each wedge and fill the center with the prepared stuffing. You should have enough filling for about 1/2 cup per avocado half.
7. Evenly distribute the salsa sauce among the bottom of the avocado shells.
8. Place the filled avocado halves back into their shells, making sure the stuffing doesn’t fall apart.
9. Cover the skillet and cook the stuffed avocados over low heat for about 10 minutes, or until heated through. Be careful not to overcook as the avocado may become too mushy.
10. Serve immediately garnished with chopped cilantro and enjoy!
Note: If you prefer a softer texture, feel free to adjust the amount of time you cook the stuffed avocados according to your liking.
