Instructions:
1. Preheat the oil in a nonstick skillet over medium heat.
2. In a large bowl, whisk together the flour mixture, baking powder, salt, cumin, paprika, garlic powder, chickpea liquid, and egg until well combined. Stir in the zucchini, chickpeas, and cherries.
3. Using a ⅓ cup measuring cup, scoop out the batter and shape into patties about ½ inch thick.
4. Place the patties in the hot skillet and cook for about 3-4 minutes on each side, or until golden brown.
5. Remove from heat and serve warm with your favorite dipping sauce. Enjoy!
