Directions
Roast Mediterranean vegetables, then assemble the wrap by layering hummus, veggies, fresh herbs, and olives in a flatbread. Roll up and enjoy. For a gluten-free version, use gluten-free wraps. For oil-free, simply omit the olive oil or use water for roasting the vegetables. Customize with your favorite seasonal veggies or add a sprinkle of sumac for extra zest.

Preheat your oven to 400°F (200°C). |

Arrange eggplant, zucchini, and red pepper strips on a baking tray. Drizzle with olive oil (or water), sprinkle with smoked paprika, salt, and pepper. |

Roast for 20 minutes or until tender and lightly browned. Let cool slightly. |

Warm the wraps if desired. Spread a generous layer of hummus down the center of each wrap. |
