Ingredients:
– 1 can (14 oz) full-fat coconut milk
– 1 ripe mango, sliced into small cubes
– 1/2 cup tapioca pearls
– 1/4 cup glutinous rice flour
– 1/2 teaspoon salt

Instructions:
1. In a blender, combine the coconut milk, mango, and salt until smooth. Set aside.
2. In a medium saucepan over low heat, stir together the glutinous rice flour and 1/2 cup water to form a thick paste. Add the tapioca pearls and cook according to package directions.
3. Once the tapioca pearls are softened, pour in the mango mixture and stir gently until combined. Cook for another minute, stirring constantly.
4. Pour the mixture into individual serving bowls or a large serving dish. Allow to cool completely before serving.

Serve chilled with additional fresh mango slices, chopped peanuts, and a drizzle of maple syrup or agave nectar if desired. Enjoy!
