1/2 cup gluten-free breadcrumbs
1 medium onion, grated
1 carrot, grated
1 green apple, grated
1/4 cup chopped fresh cilantro
1 tablespoon olive oil or avocado oil
2 tablespoons soy sauce (or tamari for gluten-free)
1 teaspoon garlic powder
1 teaspoon ground ginger
1/2 teaspoon red pepper flakes (optional for heat)
1/2 teaspoon black salt (for fermentation, optional)
1/4 teaspoon baking soda
1/4 teaspoon sea salt
Water, as needed for binding

Ingredients:
* 1 cup cooked lentils
* 1/2 cup gluten-free breadcrumbs
* 1 medium onion, grated
* 1 carrot, grated
* 1 green apple, grated
* 1/4 cup chopped fresh cilantro
* 1 tablespoon olive oil or avocado oil
* 2 tablespoons soy sauce (or tamari for gluten-free)
* 1 teaspoon garlic powder
* 1 teaspoon ground ginger
* 1/2 teaspoon red pepper flakes (optional for heat)
* 1/2 teaspoon black salt (for fermentation, optional)
* 1/4 teaspoon baking soda
* 1/4 teaspoon sea salt
* Water, as needed for binding

Instructions:

1. In a large mixing bowl, combine all the ingredients for the burgers except the water and mix well to combine. The mixture should be slightly sticky but hold together when pressed. If you need more liquid, add small amounts of water until the desired consistency is reached.

2. Divide the mixture into 4 equal parts and shape each part into a patty about 1/2-inch thick. Place the patties on a plate and set aside.

3. To prepare the glaze, whisk together all the ingredients for the glaze in a small bowl and set aside.

4. Heat a large skillet or grill pan over medium-high heat. Once hot, add the coconut oil or your choice of cooking oil. When the oil has melted and the pan is hot, place the burgers in the pan and let them cook undisturbed for about 2-3 minutes. Use a spatula to carefully flip the burgers and continue cooking for another 2-3 minutes on the other side. You may need to adjust the heat if they’re browning too quickly.

5. Brush the glaze onto both sides of the burgers during the last few minutes of cooking. Continue brushing until the glaze starts to caramelize and the burgers are fully cooked through, about 5-7 minutes per side.

6. Remove the burgers from the pan and place on a bun or lettuce wrap. Top with your favorite vegan condiments, such as kimchi mayo, dairy-free slaw, pickled vegetables, and/or fresh herbs. Serve immediately and enjoy!

Note: These burgers can also be baked in the oven at 350°F (180°C) for about 10-15 minutes per side, or until golden brown and crispy. Just be careful not to overcook, as they will become dry.
