Ingredients

For the Power Bowl Base:

* 1 large sweet potato (about 1 pound), peeled and cubed
* 1 small yam (about 1/2 pound), peeled and cubed
* 1 cup frozen cauliflower florets
* 1 tablespoon extra virgin olive oil
* Kosher salt and freshly ground black pepper

For the Fermented Vegetable Topping:

* 1 medium onion, thinly sliced
* 2 cloves garlic, minced
* 1/2 teaspoon kosher salt
* 1/4 – 1/2 cup water
* 1/4 cup apple cider vinegar
* 1/4 cup chopped pickles (from a jar)

Optional toppings:

* 1 avocado, halved and sliced
* 1 hard-boiled egg, chopped
* 1/4 cup chopped nuts (walnuts, almonds, etc.)
* Sliced green onions or chives
* Diced tomatoes
* Roasted red bell peppers
* Grated carrots
* Shredded cabbage
* Sliced mango
* Diced papaya
* Thai basil leaves

Instructions

1. Preheat your oven to 400°F. Line two baking sheets with parchment paper.
2. Toss the sweet potatoes, yam, and cauliflower with the olive oil, salt, and pepper until evenly coated. Spread them out onto the prepared baking sheets.
3. Roast for 25-30 minutes, stirring halfway through, until tender and slightly golden brown. Remove from the heat and set aside.
4. Meanwhile, prepare the fermented vegetable topping:
a. In a large bowl, combine the onion, garlic, water, and salt. Let sit for about 10 minutes.
b. Add the remaining ingredients and mix well. Adjust the consistency as desired.

To assemble the breakfast bowls:

1. Place 1/2 cup cooked grains (such as quinoa, brown rice, or millet) in the bottom of a serving bowl.
2. Top with 1/2 cup roasted veggies (sweet potatoes, yam, and cauliflower).
3. Spoon over 1/4 cup fermented vegetables.

Add any optional toppings you like! Serve immediately and enjoy.

This recipe serves 4 people. It’s easy to double or triple the recipe if needed. The preparation time does not include the roasting time for the vegetables.

Note: This power bowl can be made ahead of time and stored in the fridge for up to 3 days. Simply reheat in the microwave or on the stovetop before serving.
