Description: This exhilarating dessert will transport you on a culinary journey around the world without leaving your kitchen! With a budget-friendly, kid-friendly, gluten-free, soy-free, no bake, high fiber, and quick & easy approach, we’ve curated an array of global sweets into one delightful treat.
Ingredients:
* 2 ripe bananas (about 1 cup)
* 1/2 cup rolled oats
* 1/4 cup chia seeds
* 1/4 cup tapioca flour
* 1/4 cup coconut flakes, unsweetened
* 1 tablespoon ground cinnamon
* 1 teaspoon vanilla extract
* Pinch of salt
* 1 cup unsweetened almond milk
* Optional toppings: chopped nuts, fresh fruit, shredded coconut, maple syrup, honey, etc.
Instructions:
Step 1: In a large bowl, combine all the dry ingredients (rolled oats, chia seeds, tapioca flour, coconut flakes, cinnamon, and vanilla). Mix well.
Step 2: Add the wet ingredient (banana, almond milk, and pinch of salt) to the dry mixture. Stir until everything comes together and forms a thick batter.
Step 3: Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the chia seed gel to form.
Step 4: After refrigeration, remove the bowl from the fridge and give it a good stir. The mixture should be thick and gooey now. If not, feel free to adjust the consistency as desired by adding more liquid.
Step 5: Spoon the mixture into individual serving glasses or small ramekins. Top with additional toppings if desired.
Step 6: Place the filled glasses in the freezer for about 15-20 minutes or until they begin to set. Remove them from the freezer and let sit at room temperature for a few minutes before serving. Enjoy!
Note: You can also skip the refrigeration step and use frozen bananas instead. Simply blend the frozen bananas with the other ingredients, pour the mixture into molds or containers, and freeze until ready to serve.
