Description: These little savory bites are bursting with vibrant flavors from across Africa. Made with wholesome ingredients like sweet potatoes, chia seeds, and nutritional yeast, they’re perfect as a snack or appetizer. Best of all, they come together quickly and easily without any fancy equipment!
Ingredients (for 20-25 bites):
For the filling:
– 4 large sweet potatoes, cooked and mashed
– 1 can full-fat coconut milk (14 oz)
– 1 tablespoon maple syrup
– 1 teaspoon smoked paprika
– Salt and pepper to taste
For the crust:
– 1 cup gluten-free rolled oats
– 1/2 cup tigernut flour
– 1 tablespoon cocoa powder
– 1/4 cup unsweetened shredded coconut flakes
– 1/4 cup chopped walnuts or pecans
– 1/4 cup pitted dates, roughly chopped
Instructions:
1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
2. In a medium bowl, combine the filling ingredients (mashed sweet potato, coconut milk, maple syrup, smoked paprika, salt, and pepper) until well combined. Set aside.
3. In another medium bowl, mix together the crust ingredients (oats, tigernut flour, cocoa powder, coconut flakes, nuts, and dates).
4. Scoop about 1-2 tablespoons of the sweet potato mixture onto the palm of your hand. Roll into a ball and place on the prepared baking sheet. Repeat with remaining filling.
5. Using your fingers, gently press down on each ball to create a small indentation in the center. Spoon about 1 teaspoon of the crust mixture into the indentations.
6. Use your fingertips to help form the edges of the crust around the filling, creating a “cup” shape. Gently press the edges together to seal. Place the baking sheet in the refrigerator for at least 10 minutes to set the crust.
7. Once set, remove the baking sheet from the fridge and gently brush the tops of the cups with water using a pastry brush. This will help the crust become golden brown during baking.
8. Bake for 15-20 minutes, or until the crust is lightly browned and crisp. Remove from the oven and allow to cool completely before serving.
Serving suggestions:
These African Savannah Bites pair perfectly with fresh fruit salad, guacamole, or hummus. You can also serve them as a side dish for your favorite veggie burger or lentil soup. Store leftovers in an airtight container at room temperature for up to 3 days or freeze for up to 2 months.
