Made with only a few simple ingredients like chickpea flour, cocoa powder, and sweeteners of your choice, they come together in just minutes and have no added oils or refined sugars. Enjoy these healthier treats as is or get creative with your favorite mix-ins like coconut flakes, shredded coconut, nuts, seeds, and more!

For the Brigadeiro Base:
* 1 cup unsweetened cocoa powder
* 1/4 – 1/2 cup sweetener of your choice (such as maple syrup, agave nectar, honey, or coconut sugar), start with 1/4 cup and adjust to taste
* 1 tablespoon cornstarch or arrowroot starch
* 1 can (15 ounces) cooked chickpeas, drained and rinsed well
* 1 teaspoon vanilla extract
Optional:
* 1/4 cup chopped walnuts or pecans for garnish

Instructions:
Step 1: Prepare the brigadeiro base by whisking together all the ingredients in a high-speed blender until smooth and creamy. Scrape down the sides as necessary.
Step 2: Pour the mixture into a medium saucepan over low heat and stir constantly with a wooden spoon until thickened, about 10-12 minutes. Be careful not to let it boil.
Step 3: Remove from heat and allow the mixture to cool slightly before transferring to a mixing bowl to cool completely.
Step 4: Once the mixture has cooled, stir in any desired mix-ins (e.g., coconut flakes, shredded coconut, chocolate chips, etc.).
Step 5: Cover and refrigerate the chilled brigadeiro mixture for at least 30 minutes or up to several hours. This will help them firm up enough for handling.
Step 6: Line a small baking sheet or plate with parchment paper. Using a small cookie scoop or tablespoon, scoop out rounded teaspoonsful of the chilled brigadeiro mixture onto the prepared baking sheet.
Step 7: Place the baking sheet in the freezer for approximately 10-15 minutes or until set but still soft. You may need to adjust the timing based on your preferred consistency.
Step 8: Meanwhile, melt some additional chocolate in the microwave or double broiler for drizzling. Alternatively, use melted coconut oil or another non-dairy milk alternative.
Step 9: Gently remove the frozen brigadeiros from the freezer and using a fork, dip each one into the melted chocolate, allowing any excess to drip off. Tap lightly on the edge of the bowl to remove any remaining droplets.
Step 10: Sprinkle with optional chopped nuts or other toppings while the chocolate is still wet. Allow the excess chocolate to harden back up.
Step 11: Serve immediately or store in an airtight container in the refrigerator for up to a week or in the freezer for up to two months. Thaw at room temperature or in the fridge as needed.

Note: If you want to make these vegan and oil-free, simply omit the step of melting chocolate and instead sprinkle on some cacao nibs, desiccated coconut, or even more chopped nuts for decoration.
