Instructions:
Day 1:
1. In a medium bowl, whisk together the chia seeds and 2 cups of water until well combined. Set aside.
Day 2:
2. Add the remaining ingredients (coconut milk, mango, passionfruit, maple syrup, vanilla, and salt) to the chia seed mixture from Day 1. Whisk everything together gently.
Note: If you would like a thicker consistency, let the mixture sit for an additional hour before serving. Otherwise, refrigerate overnight.
Day 3:
3. Serve cold and enjoy as a delicious, creamy, and refreshing vegan dessert. Garnish with optional toppings if desired.
