Ingredients:
For the chocolate layer:
• 1 ripe very ripe avocado (about 1/2 cup mashed)
• 3 tablespoons unsweetened cocoa powder
• 1/4 teaspoon vanilla extract
For the mango layer:
• 1 small ripe mango (about 1/2 cup cubed)
Optional toppings:
• Sliced fresh fruit like strawberries, raspberries, blueberries, etc.
• Chopped nuts like walnuts, almonds, pecans, etc.
• Coconut flakes
• Chia seeds
Instructions:
Step 1: Prepare the chocolate layer:
1. Add all the ingredients for the chocolate layer to a food processor and process until smooth and creamy.
2. Transfer the mixture to a bowl and refrigerate for about 30 minutes or until thickened.
Step 2: Make the mango layer:
1. Meanwhile, prepare the mango layer by pureeing the cubed mango in a blender until smooth. Set aside.
Step 3: Assemble the mousse:
1. Scoop out two tablespoons of the chilled chocolate layer and place it at the bottom of your serving glasses.
2. Top each serving with about 1 tablespoon of the mango puree.
3. Carefully pour the remaining chocolate layer over the top of the mango layer.
Step 4: Garnish and serve:
1. Refrigerate the prepared mousse for another 30 minutes to set even more.
2. Serve chilled garnished with your favorite optional toppings. Enjoy!
Note: The consistency of this vegan mousse may be slightly different from traditional ones as it does not use eggs. However, we find that the texture adds to its charm and uniqueness. If you prefer a smoother consistency, simply blend the layers together before refrigerating.
