Description: These fudgy, chewy, and bite-sized energy balls are made with cacao powder, medjool dates, walnuts, almond butter, shredded coconut, and tart Montmorency cherries. They’re naturally sweetened, oil-free, and packed with healthy fats and protein to keep you feeling full and energized throughout the day. Perfect for prepping ahead, making them great for meal prep containers, gifts, or just having on hand when you need a quick pick-me-up!
Ingredients:
– 1 cup pitted and chopped tart Montmorency cherries
– 1/2 cup unsweetened shredded coconut (packed)
– 1/4 cup raw walnut pieces
– 1/4 cup loosely packed unsweetened shredded coconut
– 1/4 cup rolled oats (not instant)
– 1 tsp vanilla extract
Directions:
1. In a food processor, combine all the ingredients except for the rolled oats and process until well combined and sticking together. You may need to scrape down the sides once or twice.
2. Transfer the mixture to a large bowl and stir in the rolled oats. Mix well.
3. Using a small ice cream scoop or tablespoon, form the mixture into 1-inch balls. Place them onto a parchment paper-lined plate or tray.
4. Store any remaining energy balls in an airtight container in the refrigerator for up to 1 week or freeze for up to 3 months. Allow them to thaw at room temperature for about 10 minutes before serving.
Note: For a more intense chocolate flavor, you can use 1/2 cup cocoa nibs instead of the 1/2 cup shredded coconut. Also, if you prefer a less sweet version, simply reduce the amount of medjool dates used.
