Ingredients List:
– 1 tablespoon extra virgin olive oil (optional)
– ½ cup chopped fresh flat leaf parsley leaves
– ¼ cup chopped fresh cilantro leaves
– 2 cloves garlic, minced
– 1 tablespoon apple cider vinegar
– 1 teaspoon kosher salt
– 1/2 teaspoon coarse ground black pepper
– 1/2 teaspoon grated orange zest
– Juice from one lemon
Instructions:
1. In a food processor, combine all the ingredients except for the lemon juice. Process until combined.
2. Squeeze in the juice of one whole lemon. Taste the sauce and adjust seasoning if necessary.
3. Store the chimichurri sauce in a sealed container in the refrigerator for up to two weeks. It will keep for longer if stored at room temperature in an air-tight container.
Serving suggestion: Use the chimichurri sauce as a condiment on top of grilled chicken breast, steamed broccoli, or raw carrot sticks for a light lunch.
