Description: This recipe is inspired by one of the most popular dishes in Vietnamese cuisine, bánh mì (Vietnamese sandwich). It features a variety of ingredients that are commonly used in Vietnamese cooking such as rice noodles, pickled carrots, cucumbers, sliced tomatoes, and ground meat. The result is a delicious meal that can be enjoyed anytime and anywhere.
Ingredients List:
1 tablespoon vegetable oil
1/2 medium onion, chopped finely
1 clove garlic, minced
1 teaspoon ground coriander
1/2 teaspoon salt
1 cup rice noodles (or 1 package)
1 small bunch cilantro, leaves only
1/2 red bell pepper, seeded and cut into thin strips
1/2 green bell pepper, seeded and cut into thin strips
1 cucumber, peeled, seeds removed, and cut into thin strips
1 tomato, cut into wedges
1 pound lean ground beef or turkey
Salt and black pepper to taste
1 cup shredded cabbage
1/2 head iceberg lettuce, shredded
1/2 large avocado, pitted, peeled, and cut into cubes
1/4 cup slivered almonds
1/4 cup roasted sunflower seeds
1/2 cup raw slivered carrots
1/2 cup raw slivered radishes
1/2 cup sliced jalapeños
Instructions:
1. In a skillet, heat the oil over medium heat. Add the onions and saute until they become translucent. Set aside.
2. In a separate bowl, combine the garlic, coriander, and salt. Stir well to incorporate all the ingredients.
3. Combine the ground meat, spices mixture, and half the shredded cabbage in a large bowl. Mix everything together thoroughly using your hands.
4. Meanwhile, boil water in a pot and prepare the rice noodles according to package directions. Drain and rinse the noodles under cold running water before transferring them back to the pan.
5. To assemble the sandwich, place about 3 tablespoons of the filling onto each noodle. Top the filling with shredded lettuce, avocados, and various other toppings you prefer (such as slivered almonds, roasted sunflower seeds, raw slivered carrots, etc.). Garnish the top with cilantro leaves and jalapeño slices if desired.
6. Serving direction: Cut each sandwich into halves or quarters depending on how many people will be eating. Enjoy warm!
